Join us at Heritage Barbecue for a special dinner and book release celebration featuring internationally recognized live-fire cooking expert Genevieve Taylor. Genevieve Taylor is the author of fourteen cookery books and one of the UK’s most respected voices in live-fire cooking. She runs the Bristol Fire School, teaches across the UK and internationally, and serves as a brand ambassador for Weber and YETI. Genevieve also sits on the International Advisory Council of the AEAP (Spanish Association of Grill Masters and Pitmasters), is a member of Parrilleras Internacionales (International Association of Women Grillers), and is a World Barbecue Association judge. This intimate evening celebrates the release of Genevieve’s newest book, How to BBQ: The Definitive Guide to Fire Cooking. Guests will enjoy a five-course dinner highlighting seasonal ingredients and the art of cooking with fire. Dinner Menu Course 1 Maple cured bass crudo with lime & tequila dressing Course 2 Smoked honey carrots with burrata, dukkah & olives Ecology Centre Sourdough & extra virgin olive oil Course 3 Ribeye Tagliata, with Parmesan, arugula and balsamic Course 4 Slow roast pork shoulder with fennel, bay & lemon served with: Smoked tomatoes, with labneh, capers & croutons Crushed roasted new potatoes with herbs & garlic Seasonal leaves & herb salad Course 5 Walnut meringues, strawberries, fig leaf custard, cream (Eton mess style) $200 per person Limited to 42 seats A portion of the evening’s proceeds will support a Co-Lab Culinary Training Collective scholarship, helping the next generation of culinary professionals pursue careers in hospitality.
